Should a Summons (which might include an Agenda) for a Parish Council Meeting be dated. I believe it should because it demonstrates that it has been properly called with the correct 3 clear days, but where is the legislation please or is it just good practice.

I am not aware of a legislative requirement, however, as you say, it is good practice, for the reason stated. The legislation is at LGA1972, Schedule 12, paragraph 10(2)(b). The SLCC guidance note doesn't mention the need for a date either.

If the summons isn't dated, iit would make it harder to defend any challenges that it wasn't published 3 clear days,before the meeting took place.
